Ingredients:
- 4 chicken breast fillets
- 1 cup orange juice
- 2 teaspoons orange rind, grated
- 1 tea spoon chicken stock powder
- 1 table spoon chopped coriander leaves
- ½ tea spoon curry powder
- ½ tea spoon nutmeg, ground
- Salt and Pepper to taste.
Method:
Mix all the marinade ingredients together and stir well. Add the chicken and coat well with the marinade. Cover and keep in the fridge for 2-3 hours. Take out the chicken and grill turning frequently. Keep brushing the chicken with the marinade mixture. Serve as high protein healthy snack.
