Ingredients:
- 3 cups rice, cooked
- 1 cup cheese, grated
- 1 tea spoon garlic, mashed
- 2 eggs, beaten
- 1 cup tomato sauce
- 12 cup mushrooms, sliced
- ½ cup cooked chicken, minced
- ½ cup green pepper (capsicum) thinly sliced.
Method:
In a bowl, mix the rice, eggs and cheese well. Put this mixture into a flat frying pan and spread out the mixture to cover the base of the pan. Cover and cook for at least 15 minutes. When if becomes brown and crusty, spread tomato sauce mixed wit salt, pepper and garlic on the top of the crusty base. Top with the chicken, green pepper and mushrooms and sprinkle with cheese. Cover and cook a further 10 minutes. Uncover and cook another 5 - 10 minutes. Serve garnished with chopped spring onions.
