Stuffed Pancakes

Try these stuffed pancakes for a fantastic snack. Let your imagination run wild. Fill the pancakes up with your favourite filling.

Ingredients:

  • 4 oz flour
  • Pinch of salt
  • 1 egg
  • 280 ml milk or equal quantity of milk and water

For Filling:

  • 4 oz bacon 
  • 1 small onion, chopped 
  • ½ cup mushrooms (sliced) 
  • 2 or 3 tomatoes, chopped
  • salt and pepper 
  • cheese or tomato sauce

Method

  1. Sift the flour and salt. Add the egg and enough milk or milk and water to give a creamy consistency. Beat well.
  2. Remove rinds from the bacon. Fry the rinds to get fat. In the same fat, fry the onion, copped bacon, mushrooms, tomatoes, salt and pepper to taste. Make the pancakes and spread each of them with the filling. Roll the pancakes with the filling inside or line the pancakes one on top of the other with the filling spread in between. Top with grated cheese and grill in a hot oven for 5 minutes.Garnish with parsley and tomato slices.
