Fruit Soup

Serve soup as a dessert for an interesting finale to the meal.

Ingredients

  • 1 11 ounce package mixed dried fruit
  • ½ cup raisins
  • 2 to 4 inches stick cinnamon
  • 1 medium orange, thinly sliced
  • 1 - 18 ounce can pineapple juice
  • ½ cup currant jelly
  • ¼ cup sugar
  • 2 tablespoons quick cooking tapioca
  • ¼ teaspoon salt

Method

  1. In a large saucepan combine the mixed dried fruits, raisins, cinnamon, and 4 cups water.
  2. Bring to a boil, simmer uncovered, until the fruit is tender.
  3. About 30 minutes.
  4. Add the remaining ingredients.
  5. Bring to a boil, cover and cook over low heat 15 minutes, stirring occasionally.
  6. Remove the stick cinnamon.
  7. Serve warm or chilled.

Makes 8 to 10 servings.
