Fruit Soup |

Serve soup as a dessert for an interesting finale to the meal. |
Ingredients-
1 11 ounce package mixed dried fruit
-
½ cup raisins
-
2 to 4 inches stick cinnamon
-
1 medium orange, thinly sliced
-
1 - 18 ounce can pineapple juice
-
½ cup currant jelly
-
¼ cup sugar
-
2 tablespoons quick cooking tapioca

¼ teaspoon salt
Method- In a large saucepan combine the mixed dried fruits, raisins, cinnamon, and 4 cups water.
- Bring to a boil, simmer uncovered, until the fruit is tender.
- About 30 minutes.
- Add the remaining ingredients.
- Bring to a boil, cover and cook over low heat 15 minutes, stirring occasionally.
- Remove the stick cinnamon.
- Serve warm or chilled.
Makes 8 to 10 servings. |
