Fried Ice Cream Ball |

A wonderful combination of hot and cold. |
Ingredients- 1 hard well set Vanilla ice cream brick (1 litre)- scooped to make big balls, about 7-8
- 10-12 slices of fresh bread- broken into small pieces
- 5 tbsp orange marmalade or any other jam
- 3/4 cup desiccated coconut.
- Coating: 1 1/2 cup rice flour mixed with about 1/3 cup water to make paste.
Method- Grind half of the bread at a time in the mixer to get bread crumbs. Remove from mixer to a big bowl. Grind the remaining bread and put all in the bowl.
- To the bread crumbs, add jam and coconut powder. Mix gently.
- Take a scoop of ice cream and makeit into a round ball by rolling it between your hands. Immediately put in the bread bowl and picking up the bread crumbs, coat the ball nicely with bread to absorb the melting ice cream. Keep in the freezer for 1 hour.
- Put rice flour in a separate bowl. Add water to get a thin puring consistency. Roll the hardened ice cream ball in rice flour paste. Keep in the freezer in a bread box till serving time.
- At serving time, heat 11/2 cups oil in a large pan for frying. Do not fill the pan with too much oil. Put one ballat a time in hot oil. Change side after 30 seconds. Do not touch it immediately. Fry turning sides till crisp and golden. Remove on paper napkins to absorb excess oil. Serve whole or cut into half with a sharp knife. Top with a little coconut powder if you like.
