Diabetics Healthy Treats

Below you will find some of the most delicious recipes that are not only suitable for diabetics but those planning on losing weight, those who are on a diet too or those who just plan to eat healthily.

DIABETIC ORANGE DATE BARS

Ingredients:

  • 1 c. chopped dates
  • 1/4 c. sugar
  • 1/3 c. vegetable oil
  • 1/2 c. orange juice
  • 1 c. all purpose flour
  • 1/2 c. chopped pecans
  • 1 egg
  • 1 1/2 tsp. baking powder
  • 1 tbsp. grated orange rind

Method:

  1. Combine dates, sugar, oil and juice in a saucepan.
  2. Cook for 5 minutesto soften dates. Cool.
  3. Add remaining ingredients.
  4. Spread into an oiled 8"x8" baking pan.
  5. Bake in 350 degree oven for 25 to 30minutes.
  6. Cool before cutting. Makes 36 bars.

DIABETIC BARS

Ingredients:

  • 1/2 c. dates
  • 1/2 c. raisins
  • 1/2 c. prunes
  • 3 eggs
  • 1/2 c. oleo or margarine
  • 1 tsp. soda
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 1 c. flour

Method:

  1. Cut up fruits and boil with 1 cup water add margarine.
  2. Mix all the other ingredients with eggs and dry ingredients.
  3. Add fruit mixture.
  4. Bake in greased 9 inch square pan at 350 degrees for 25 to 30minutes.

Note: 1/4 teaspoon each cinnamon and nutmeg may be added *1/2 cup nuts or coconut may be used.

BANANA NUT SQUARES FOR DIABETICS

Ingredients:

  • 2/3 c. margarine
  • 4 pkg. Sweet "n Low or 2 or 3 tsp.
  • 2 eggs, separated (stiffly beat whites)
  • 1 c. mashed bananas
  • 1 1/2 c. flour
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 c. sour cream
  • 1/2 tsp. vanilla
  • 1/2 c. chopped nuts

Method:

  1. Cream Sweet "n Low and margarine.
  2. Add egg yolks and mix well.
  3. Add bananas, sift dry ingredients.
  4. Add alternately with sour cream to shortening mixture.
  5. Mix until well blended.
  6. Add vanilla, stiffly beaten egg whites and nuts.
  7. Pour into two 8x8 or 9x9 inch square pans.

Doesn't rise like regular bars.

IT COULD BE A SNICKERS BAR

Ingredients:

  • 12 oz. soft diet ice cream
  • 1 c. diet Cool Whip
  • 1/4 c. chunky peanut butter
  • 1 pkg. sugar-free butterscotch pudding (dry)
  • 3 oz. Grape-Nuts cereal

Method:

  1. Mix first 4 ingredients in mixer, then stir in cereal.
  2. Pour into 8 inch square pan.
  3. Cover and freeze

Makes 4 servings.

DIABETIC NUT LOAF

Ingredients:

  • 24 or 2 1/2 c. dates or raisins
  • 2 eggs
  • 1/4 c. vegetable oil
  • 2 c. flour, self rising
  • 1/2 c. chopped nuts
  • 1 tsp. baking soda
  • 2 tsp. liquid sweetener
  • 1 tsp. Vanilla

Method:

  1. If using all purpose flour, add 1/2 teaspoon salt and 1 teaspoon baking powder.
  2. Use 350 degree oven.
  3. Put cut dates or raisins into bowl; sprinkle with baking soda and cover with 1 cup boiling water.
  4. Let stand until cool.
