Cyprus has a particularly delicious sweet, often served after a meal, called Glyko. It literally means sweet. It is made from all kinds of citrus fruit and sugar syrup.
Here is a new take on that. These are irresistible morsels to offer guests after dinner.
- Take two oranges. Take off the peel and cut into strips about five or six millimetres wide. Put the oranges aside and use for juicing.
- Boil the strips in a pan of water for five minutes. Discard the water and repeat.
- Make up a sugar syrup using equal amounts of sugar and water. Eight ounces of sugar to eight fluid ounces of water is about right.
- Heat the mixture and add the orange slices. Cover and cook at a rolling simmer for one hour. Make sure to check after 30 minutes and 45 minutes to ensure the mixture hasn't boiled too low.
- Put the slices to dry on a wire rack
- Melt about 400 grams of best dark chocolate in a bowl over some water. Coat the orange strips, place on a backing sheet and leave somewhere cool to set.
