The Best Diabetic Recipes Ever

At one time of day it used to be the case that food for diabetics was on the whole bland and tasteless and that diabetics had to miss out on such delights as chocolate, cakes, cookies and much more besides. But that is not the case today.

Being a diabetic doesn't just affect your life physically and mentally but also socially. Those who aren't diabetics take the fact that they can eat what they like when they like for granted. Unfortunately being a diabetic means that every morsel you put in your mouth has to be accounted for.

Below you will find some of the most delicious recipes that are not only suitable for diabetics but those planning on losing weight too.

CHOCOLATE CHIP COOKIES:

Ingredients:

  • 1/4 c. margarine
  • 1 tbsp. granulated fructose
  • 1 egg
  • 1 tsp. vanilla extract
  • 3/4 c. flour
  • 1/4 tsp. salt
  • 1/2 c. mini semi-sweet chocolate chips

Method:

  1. Cream together margarine and fructose, beat in egg, water and vanilla.
  2. Combine flour, baking soda and salt in sifter.
  3. Sift dry ingredients into creamed mixture, stirring to blend thoroughly.
  4. Stir in chocolate chips.
  5. Drop by teaspoonful onto lightly greased cookie sheet about 2 inches apart.
  6. Bake at 375 degrees for 8 to 10 minutes.
  7. Makes 30 cookies.

SUGARLESS CAKE:

Ingredients:

  • 1 c. dates, chopped
  • 1 c. prunes, chopped
  • 1 c. raisins
  • 1 c. cold water
  • 1 stick margarine, melted
  • 2 eggs
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 c. plain flour
  • 1 c. nuts, chopped
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 tsp. Vanilla

Method:

  1. Boil dates and prunes in the one cup of water for 3 minutes; add margarine and raisins and let cool.
  2. Mix flour, soda, salt, eggs, nuts, spices and vanilla.
  3. Add to fruit mixture.
  4. Stir to blend.
  5. Pour into baking dish.
  6. Bake at 350 degrees for 25 to 30 minutes.

ALMOND BISCUIT RING:

Ingredients:

  • 1/4 c. granulated brown sugar, replacement
  • 2 tbsp. dietetic maple syrup
  • 2 tsp. reduced calorie margarine
  • 2 tsp. water
  • 1/3 c. almonds, coarsely chopped
  • 1 (8 oz.) tube refrigerator biscuits

Method:

  1. In a 1 1/2 quart microwave safe casserole, combine the brown sugar replacement, maple syrup, margarine and water.
  2. Cover with a paper towel and microwave on high for one minute.
  3. Allow to sit, covered for one minute, then stir to mix in the melted margarine.
  4. Stir in the almonds. Cut each of the biscuits into four pieces.
  5. Roll each piece into a ball. Dip each piece into the syrup mixture then place in a microwave safe ring mould.
  6. Arrange all coated balls uniformly around the ring mould.
  7. Pour any remaining syrup over theballs in the mould.
  8. Microwave on medium (50% power) for 5 to 6 minutes, turning the mould 1/4 turn after each two minutes.
  9. Remove from oven and immediately cover with waxed paper.
  10. Allow to sit undisturbed 5 minutes; then turn out onto a serving dish.
  11. Divide into 10 servings.
  12. About 80 calories per serving.
