Super Chocolate Cookie

It is a huge Chocolate Chip Cookie and tastes real good to.

Ingredients:

  • 125 ml margarine softened
  • 83 ml firmly packed brown sugar - I usually use half
  • 62 ml white sugar - I usually use half
  • 1 egg
  • 5 ml vanilla
  • 333 ml all purpose flour
  • 2 ml baking spda
  • 1 ml salt
  • 150 ml semi - sweet chocolate chips
  • 125 ml chopped nuts (optional)

Method:

  1. Preheat oven to 350 F Grease a 13 inch round pizza - style pan.  In a large bowl, Measure butter and sugars, With a mixture on high speed cream butter mixture until light and fluffy, occasionally scraping with a spatula
  2. Next beat an egg until well-blended.  Beat in vanilla Reduce speed to low and gradually beat in flour, soda and salt until well mixed.  With a wooden spoon fold the chocolate chips, morsels and nuts - I like to use pecans and walnuts
  3. With rubber spatula, spread dough to edge of pan.  Be sure to uniformly distribute dough throughout the pan.   Otherwise, some parts will be too shewy (undercooked) and others too dry and brittle (over cooked)
  4. Bake for 15 - 20 minutes or until golden brown.  The cookie is done when it feels set and dry to the touch.  Remove from the oven and let it cool in pan After it is completely cooled, cut into wedges.  Makes 16 wedges.
