Ingrediants
- 150g/8oz of Plain flour
- 25g/1oz of Rice flour
- 100g/4oz of Cold butter
- 50g/2oz of Caster sugar
- And a 20cm/8in Shallow tin
Method
1. Turn on your oven and adjust the temperature to 150oc/Gas mark 2.
2. Grease the inside of your pan with a piece of kitchen roll and a small amount of butter.
3. Sieve the plain and rice flour into a mixing bowl.
4. Cut the butter into small chunks and coat them in flour after putting them in the bowl.
5. Rub the pieces of butter into the flour between your index finger and thumb until the mixture looks like breadcrumbs.
6. Stir in the caster sugar.
7. Use the bowl to rub the mixture into a ball. The heat from your hand should help the mxture stick together better.
8. Evenly place the mixture into the tin. Use a spoon to smooth the top.
9. Make any patterns you want now. I find using the prongs of a fork to press around the edge. Then cut the mixture into eight equal pieces.
10. Bake for 30 minutes.
