Rich Blueberry Muffins

Rich Blueberry Muffins

Size of pan/pot: muffin tin + paper liners Grease: Yes
Oven Temperature: 450°F (very hot oven) Serves: 12 muffins

Ingredients:

  • 1/4 cup softened butter
  • 3/4 cup sugar
  • 2 eggs
  • 3/4 cup sour cream
  • 11/4 cup flour
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 cup blueberries (if frozen, it's OK)

Preparation:

  1. Preheat oven. Put muffin cups in muffin tin.
  2. In large bowl, mix butter and sugar until creamy.
  3. Add eggs one at a time until well blended.
  4. Gradually add sour cream and flour/baking powder, alternating wet and dry.
  5. When just mixed, add vanilla and blueberries. Stir in gently.
  6. Fill muffin cups (2/3 full).
  7. Bake for 15-20 minutes until golden on top and toothpick comes out clean.
  8. Let rest for 10 minutes and remove from muffin tin.

Serving suggestions: Best served warm - with butter.
