Oven Temperature: 450°F (very hot oven) Serves: 12 muffins
Ingredients:
- 1/4 cup softened butter
- 3/4 cup sugar
- 2 eggs
- 3/4 cup sour cream
- 11/4 cup flour
- 1 tsp baking powder
- 1 tsp vanilla
- 1 cup blueberries (if frozen, it's OK)
Preparation:
- Preheat oven. Put muffin cups in muffin tin.
- In large bowl, mix butter and sugar until creamy.
- Add eggs one at a time until well blended.
- Gradually add sour cream and flour/baking powder, alternating wet and dry.
- When just mixed, add vanilla and blueberries. Stir in gently.
- Fill muffin cups (2/3 full).
- Bake for 15-20 minutes until golden on top and toothpick comes out clean.
- Let rest for 10 minutes and remove from muffin tin.
Serving suggestions: Best served warm - with butter.
