Pumpkin Cake Cookie Recipe

Delicious Pumpkin Cake Cookies! They've got the nice crunchy shell of cookies while retaining the soft delectable taste of cake inside.

Ingredients:

  • 2 Eggs
  • 1 Cup Pumpkin Puree
  • 1 1/2 Cups White Sugar
  • 2 3/4 Cups Flour
  • 1 Tsp Baking Powder
  • 2 Tsp Ground Cinnamon
  • 1 Tsp Ground Nutmeg
  • 1 Tsp Ground Ginger
  • 1/2 Tsp Salt
  • 8 Tbsp Butter (softened)

Method

  1. Preheat oven to 350 degrees F. Grease a cookie sheet.
  2. Combine eggs, sugar, and pumpkin puree in a large bowl.
  3. Mix flour, cinnamon, nutmeg, ginger, baking powder and salt in a seperate bowl. Slowly stir dry ingrediants into wet mixture.
  4. Freeze batter for one hour. Then using a 1 1/2 Tablespoon scoop, place batter onto cookie sheet about 1 inch apart. Flatten with the bottom of a spoon.
  5. Bake for 8-12 minutes or until cookies have browned.

I loved these! They were absolutely delicious! How did you come up with a recipie like this? My family was so happy and now insists that they accompany the table at any holiday :)
