Pumpkin Cake Cookie Recipe |

Delicious Pumpkin Cake Cookies! They've got the nice crunchy shell of cookies while retaining the soft delectable taste of cake inside. |
Ingredients:- 2 Eggs
- 1 Cup Pumpkin Puree
- 1 1/2 Cups White Sugar
- 2 3/4 Cups Flour
- 1 Tsp Baking Powder
- 2 Tsp Ground Cinnamon
- 1 Tsp Ground Nutmeg
- 1 Tsp Ground Ginger
- 1/2 Tsp Salt
- 8 Tbsp Butter (softened)
Method- Preheat oven to 350 degrees F. Grease a cookie sheet.
- Combine eggs, sugar, and pumpkin puree in a large bowl.
- Mix flour, cinnamon, nutmeg, ginger, baking powder and salt in a seperate bowl. Slowly stir dry ingrediants into wet mixture.
- Freeze batter for one hour. Then using a 1 1/2 Tablespoon scoop, place batter onto cookie sheet about 1 inch apart. Flatten with the bottom of a spoon.
- Bake for 8-12 minutes or until cookies have browned.
