No Bake Cookies

Delicious peanut butter and coconut cookies.

Here is a great cookie for your barbecue crowd which doesn't involve turning on your oven.

Ingredients:

  • 2 cups sugar
  • 4 Tbls. Cocoa
  • ½ cup Evaporated Milk
  • 1 stick butter

Mix ingredients in a saucepan and stir on medium heat and then let it boil for 30 seconds. This is a very simple step and doesn't take long for the mixture to get hot enough to boil. Take it off the stove as soon as the 30 Seconds are up. Set it aside.

Add to the warm mixture:

  • ½ Cup peanut butter
  • 1 tsp. vanilla
  • 4 Cups Rolled Oats
  • ½ cup of chopped nuts OR ½ cup of shredded coconut

Blend and stir the ingredients. Use a small cookie scoop and drop on waxed paper. Set aside for 30-60 minutes.

Serve when ready. They are delicious!
