Meringues Poached in Vanilla Milk

This is a recipe my mom wrote me for a school assignment for meringues poached in a vanilla milk.

Ingredients:

  • 3(three) separated eggs
  • 1/3(one third) cup caster sugar
  • 3/4(three quarters) cup of icing sugar, sifted
  • 1(one) tablespoon of corn flour
  • 3(three) cups of milk (any milk will do)
  • 1(one) teaspoon of vanilla extract (usually a brown liquid)
  • 2(two) tablespoons of extra caster sugar

Method:

  1. Whisk the egg whites in a bowl with electric mixer until soft peaks start to form.
  2. Add the sugar gradually and beat until stiff and glassy, fold in the icing sugar And corn flour.
  3. Place the milk and vanilla extract in a deep frying pan over a low heat And bring to a simmer.
  4. Add large amounts of the meringue mixture and cook in batches For 2(two) minutes then gently turn over and cook for another 2(two) minutes or until firm to the touch.
  5. Set the meringues aside and keep warm.
  6. Whisk the egg yolks and that extra 2(two) Tablespoons of caster sugar until thick and pale.

ThatÂ’s pretty much all there is to it pretty simple really.

I followed this right through. It's nice and clear but you need to tell us what to do with the egg yolks and caster sugar mixture after point 6.
