Cranberry and Macadamia Nut Shortbread Cookies

These easy to make cookies are always a favorite around our house during the holiday season.

Ingredients

  • 1/2 - 3/4 cup Macadamia Nut peices
  • 1/2 cup Dried Cranberries chopped
  • 1/8 tsp finely grated Orange or Lemon zest
  • 1 cup room temperature Butter (unsalted)
  • 1/2 cup Icing Sugar
  • 1 1/2 cups white Flour
  • 1/8 -1/4 tsp salt

Method

  • Line baking sheets with parchment paper
  • Beat butter and powdered sugar in a large bowl until completely blended
  • Sift together flour and salt in a separate bowl
  • Gradually mix flour and salt into butter and sugar mixture until completely blended
  • Stir in orange or lemon zest, Cranberries and Macadamia nuts
  • Make balls of aprox. 1 - 1 1/2 tbsp of dough and place 1"  apart on cookie sheet
  • Flatten slightly with a fork
  • Bake in pre-heated 325* oven until tops of cookies are a light brown
  • Let cookies cool before removing from cookie sheet

Tip

 If you have a sweet tooth, White Chocolate Chips are a delicious addition to these cookies.
