Cookie Delights for Diabetics

Below you will find some of the most delicious recipes that are not only suitable for diabetics but those planning on losing weight, or those who are on a diet too.

DIABETIC COOKIES!

Ingredients:

  • 1 c. raisins
  • 1 c. water
  • 2 eggs, beaten
  • 1 tsp. vanilla
  • 1 c. flour
  • 1/4 c. dates, chopped
  • 1/2 c. shortening
  • 3 tsp. sweetener
  • 1 tsp. Soda

Method:

  1. Boil raisins, dates and water for 3 minutes.
  2. Add shortening and cool.
  3. Add eggs, then all remaining ingredients and mix well. Chill.
  4. Droponto ungreased cookie sheet.
  5. Bake at 350 degrees for 10 to 12 minutes.

DIABETIC FRUIT COOKIES!

Ingredients:

  • 1 c. flour
  • 1 tsp. baking soda
  • 1 c. water
  • 1 c. dates, chopped
  • 1/2 c. apples, peeled & chopped
  • 3/4 c. raisins
  • 1/2 c. margarine
  • 1 c. quick oats
  • 2 eggs, beaten (or eggbeaters)
  • 1 tsp. vanilla
  • 1 c. pecans, chopped

Method:

  1. Sift flour and soda, set aside.
  2. Cook water, dates, apple and raisins; bring to a boil.
  3. Simmer 3 minutes.
  4. Remove from heat and add the margarine and stir.
  5. Cool mixture and then add eggs, oatmeal and the dry ingredients; add the vanilla and nuts.
  6. Cover and refrigerate overnight.
  7. Drop on cookie sheets 2 inches apart.
  8. Bake in 350 degree oven for about 24 minutes.
  9. Store in the refrigerator in air tight container.
  10. May also add 1 tsp. cinnamon to dry ingredients if desired.

DATE DIABETIC COOKIES!

Ingredients:

  • 2/3 c. cold water
  • 3/4 c. oleo
  • 1 c. chopped dates
  • 1 egg
  • 1/4 tsp. nutmeg
  • 1 tbsp. cinnamon
  • 1/2 tsp. soda
  • 1/2 tsp. baking powder
  • 1 tbsp. sweetener
  • 1 tbsp. water
  • 1 c. flour

Method:

  1. Cook cold water, oleo and dates for 3 to 4 minutes and cool.
  2. Mix all ingredients.
  3. Drop by teaspoons on greased cookie sheet.
  4. Bake at 350 degrees for 12 minutes or until done.

SUGARLESS COOKIES (FOR DIABETICS)!

Ingredients:

  • 1 c. flour
  • 1 1/2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. salt (opt.)
  • 1/4 tsp. nutmeg
  • 1 tsp. ground cloves
  • 1 tsp. allspice
  • 1 1/2 c. raisins
  • 1 c. unsweetened apple sauce
  • 1/2 c. oil
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 c. chopped nuts
  • 1 c. quick (Mother's) oats

Method:

  1. Mix dry ingredients and add remaining ingredients to moisten.
  2. Drop by teaspoonful onto greased cookie sheet.
  3. Bake at 375 degrees for 12 minutes.
