Brown sugar shortbread is delicious melt-in-your mouth goodness, a wonderful accompaniment to tea or coffee.
Shortbread cookies are a traditional favorite, enjoyed at Christmas and for other special occasions.

Ingredients
- 2 cups butter
- 1 cup brown sugar
- 4 cups sifted flour
Method
- Butter should be at room temperature. Cream well with sugar.
- Add flour gradually, working in with a wooden spoon or a mixer until dough becomes stiff. Turn dough onto counter and work in remaining flour with hands, kneading until dough cracks.
- Roll and then form into square 11/2”x11/2” foot-long logs, using counter to square sides
- Wrap in waxed paper and chill in fridge
- Slice and bake in a 300-degree oven, until golden brown and crispy. Don't over brown shortbread cookies.
Brown sugar shortbread cookies are a nice change from regular shortbread, good to eat at any time of the year.
