Shoo Fly Slice

This Pennsylvania Dutch classic is deliciously dark and sticky. It is even better made a few days in advance of when you intend to eat it - just wrap in tinfoil and leave well alone, if you have the willpower.

Ingredients

  • 300g plain flour
  • 125g light brown soft sugar
  • 125g dark brown soft sugar
  • 125g unsalted butter, softened
  • 250ml molasses or treacle
  • 250ml boiling water
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Method

  1. Preheat the oven to 350°C. Grease and line a deep-sided 6" x 12" swiss roll tin.
  2. Sift together the flour and sugar into a large mixing bowl. Rub in the butter to get a fine crumb.
  3. In a large jug, mix together the molasses, boiling water, baking soda, salt and vanilla, and stir until well combined.
  4. Put all but 1 cup of the crumbs into the bottom of the cake tin, and press down lightly. Pour over the molasses mixture, then sprinkle with the remaining crumbs.
  5. Bake for 45 minutes. Leave to cool in the tin.
