Shoo Fly Slice |

This Pennsylvania Dutch classic is deliciously dark and sticky. It is even better made a few days in advance of when you intend to eat it - just wrap in tinfoil and leave well alone, if you have the willpower. |
Ingredients- 300g plain flour
- 125g light brown soft sugar
- 125g dark brown soft sugar
- 125g unsalted butter, softened
- 250ml molasses or treacle
- 250ml boiling water
- 1 tsp bicarbonate of soda
- 1/2 tsp salt
- 1 tsp vanilla extract
Method- Preheat the oven to 350°C. Grease and line a deep-sided 6" x 12" swiss roll tin.
- Sift together the flour and sugar into a large mixing bowl. Rub in the butter to get a fine crumb.
- In a large jug, mix together the molasses, boiling water, baking soda, salt and vanilla, and stir until well combined.
- Put all but 1 cup of the crumbs into the bottom of the cake tin, and press down lightly. Pour over the molasses mixture, then sprinkle with the remaining crumbs.
- Bake for 45 minutes. Leave to cool in the tin.
