Recipe for Italian Ricotta Cake

Italian Ricotta cake like Mama Troiani used to make.

Ingredients:

  • 2 pounds Ricotta cheese ( no skimping for health reasons, this is a treat and calories don’t count!)
  • 4 eggs
  • 1 cup white granulated sugar
  • 3 teaspoons Crème de CaCou
  • 1 box of yellow cake mix ( brand of preference)
  • Powdered (10x confectioners) sugar

Method:

Preheat oven to 350 degrees. Grease and flour a 9x13” cake pan.

Beat together Ricotta, eggs, sugar and flavoring until creamy, and set aside. Prepare packaged cake mix according to directions and pour into the prepared cake pan. Drizzle ricotta mixture over the cake batter in the prepared pan. Bake at 350 degrees for 45 to 55 minutes. Cool, then dust with powdered sugar and enjoy!
