Raisin Cake

The perfect substitute to a traditional fruitcake is a traditional raisin cake.

Ingredients:

  • 1 cup raisins ½ cup currants
  • ½ cup milk ¼ cup grated orange peel
  • 2 ¼ cups flour ¼ cup chopped almonds
  • ¾ cup sugar ¾ cup butter
  • 3 eggs 1 teaspoon baking powder
  • ½ teaspoon salt 12 almonds split

Method:

  1. Add baking powder and salt to flour.
  2. Whip butter and beat in sugar.
  3. Add eggs one at a time and beat after each egg.
  4. Add to flour alternating with milk.
  5. Stir.
  6. Fold in chopped raisins, currants, orange peel and nuts.
  7. Turn into prepared greased and floured round pan lined on bottom with waxed paper.
  8. Take a piece of wax paper to fit the top of a nine inch round pan, press into pan, with a sharp knife go around paper.
  9. Leave middle and throw out sides.
  10. Decorate top of cake with split almonds.
  11. Bake in preheated 325* oven for 1 hour and 15 minutes.
  12. Cake should be shrinking from sides of pan.
  13. Cool before removing from pan.
