Pumpkin Pie Cake: A Wonderful Fall Treat

Do you like pumpkin pie? Are you looking for something different to serve fro Thanksgiving, Christmas, or just because? Try this wonderful recipe. I think you will be pleasantly surprised.

For Pumpkin Pie Cake you will need the following ingredients.

Ingredients

  • 1 can - 2 1/2# pumpkin ( 3 1/2 cups)
  • 4 eggs
  • 1 cup evaporated milk
  • 1 1/2 cups sugar
  • 2 tsp. cinnamon
  • 1 tsp. ginger
  • 1 tsp. cloves
  • 1 tsp. salt

Method

Mix these ingredients and spread into a greased 9 x 13 cake pan.  Sprinkle large Yellow* cake mix over the top of the pumpkin mixture.  Sprinklr chopped nuts(optional) over the top of the cake mix. Melt 1 1/2 sticks of margarine or butter and drizzle over the top.  Bake at 425 degrees for 15 minutes, reduce heat to 350 degrees and bake for 30 minutes or until the top is a golden brown.  Serve with whipped cream.

 * Only use yellow cake mix.  it will not turn out the same with any other mix, believe me, I've tried!

I will give this a try. It's close to a pumpkin crisp recipe that I've been making for the last couple of years at Thanksgiving. This one sounds like it might be better since it has ginger and cloves. My version has nutmeg instead.
