Prune and Fig Cake: It Will Keep You Going

A tasty way of eating high fiber.

Ingredients

  • 150g Whole wheat flour
  • ½ Teaspoon Bicarb of Soda
  • 1 Teaspoon mixed spice
  • 125g Dried figs
  • 125g Prunes (pitted and chopped)
  • 150ml Apple juice (100% juice)
  • 120ml Natural Yogurt
  • 120ml Corn oil
  • 2 Eggs (beaten)

Method

  1. Into a saucepan put, figs, apple juice and prunes, cover the pan and gently simmer for 10 minutes.
  2. Remove from heat and leave to cool.
  3. Once cool add the rest of the ingredients and stir thoroughly, pour into a lined, greased 20cm cake tin, make sure it is a deep one.
  4. Bake in a moderate oven 180c, gas 4 for 50 minutes, check it is firm and cooked, remove from oven and leave in tin for 2/3 minutes, then place onto a cooling rack.
  5. You can also add chopped walnuts (25g) on top of the mixture before cooking for added flavor and texture.

NB: Because this cake is very high in fibre it is not wise to consume large portions or to give it to children under 3 years
