Piña Colada Cake Recipe

How to make a Piña Colada cake.

Ingredients

  • 1 white cake mix
  • 1 Jell-O coconut (or vanilla instant pudding)
  • 4 eggs
  • 1 cup coconut
  • 3/4 cup water
  • 1/3 dark rum (you can also use rum extract)
  • 1/4 cup oil

Method

  1. Blend all ingredients together.
  2. Mix 4 minutes at medium speed.
  3. Pour into 2 greased and floured 9" pans.
  4. Bake at 350 for 25-30 min until done.
  5. Do not under bake.
  6. Cool in pan for at least 15 minutes.
  7. Remove from the pan, then cool on a rack.

Piña Colada Frosting

Ingredients

  • 1 can of crushed pineapple
  • 1 package of Jell-O coconut cream or vanilla instant pudding
  • 1/3 cup dark rum (you can also use rum extract)
  • 9 oz. container of Cool Whip

Method

  1. Combine all ingredients, and beat until well blended.
  2. Fold in Cool Whip.
  3. Frost cake and sprinkle coconut over top.
  4. Refrigerate.
