Orange muffins

These orange muffins are easy to make. They get a tangy, slightly bitter taste from the orange zest, and a fresh airy texture.

Ingredients

  • 100g butter
  • 170g sugar
  • 3 eggs
  • 180g plain flour
  • 1 tsp. Baking powder
  • Grated zest of 2 oranges
  • Juice of 1 orange (approximately 50ml)
  • 50 dark chocolade, grated

Cooking instructions

  1. Mix sugar and butter well until soft and smooth. Mix in the eggs – one at a time.
  2. Mix the baking powder and the flour, and add it to the mixture
  3. Add orange zest and juice
  4. Put the dough into 15 muffin cases
  5. Bake the muffins in the oven at 225C/gasmark 7 for approximately 10 minutes
  6. Meanwhile, roughly grate the chocolate, or chop it with a knife
  7. When baked, take the muffins out of the oven, and spread the chocolate over them so it melts on top of them

Serving suggestion

The muffins are best served freshly baked with whipped cream. If you want to make it more restaurant like you can serve with an orange sauce made of the juice of the second orange mixed with 50-100g sugar reduced down over a gentle heat.

The muffins will keep in a sealed container for 2-3 days. They can NOT be frozen.
