Must Have Recipes for Diabetic

At one time of day it used to be the case that food for diabetics was on the whole bland and tasteless and that diabetics had to miss out on such delights as chocolate, cakes, cookies relishes, savory dishes and much more besides. For people with diabetes, healthy eating is not simply a matter of "what you eat", but also when you eat. The question of how long before a meal you should inject insulin is one that is asked most often and more so than any other question concerning diabetes. The answer is that it depends upon the type of insulin you take and whether it is long, medium or quick-acting insulin. If patients check their blood glucose at bedtime and find that it is low, it is advisable that they take some long-acting carbohydrate before retiring to bed to prevent night-time hypoglycaemia.

Being a diabetic doesn't just affect your life physically and mentally but also socially. Those who aren't diabetics take the fact that they can eat what they like when they like for granted. Unfortunately being a diabetic means that every morsel you put in your mouth has to be accounted for.

Bread Custard Recipe

(Makes One serving)

Ingredients

  • 1 slice bread
  • 1 cup milk
  • 1 egg
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon nutmeg
  • Diabetic sugar to your taste

Method

  1. You may double or triple the amounts for a larger portion.
  2. Heat oven to 350 degrees F.
  3. Butter a small oven-safe dish.
  4. Cut and dice bread into small cubes and toast in oven until brown and crisp.
  5. Beat egg and add to milk.
  6. Pour the mixture over the bread in the dish.
  7. Sprinkle the nutmeg and cinnamon over the top.
  8. Place the dish in a pan of warm water.
  9. Bake until custard is set.
  10. Insert a knife into custard.
  11. If it comes out clean, remove from oven.
  12. Serve warm with a lemon or orange sauce.

Almond Angel Food Cake Recipe

Ingredients

  • 1/2 cup ground almonds
  • 8 egg whites
  • 1/2 teaspoon cream of tartar
  • 2 teaspoons almond extract
  • 1 1/4 cups granulated sugar
  • 1 cup all-purpose flour, sifted
  • 1/2 cup sliced almonds
