Lemon Walnut Butter Cake

A very rich dense cake that is delicious eaten alone, ala cart, or as a shortcake.

Ingredients

  • 2 sticks of butter or margarine
  • 2 cups of sugar
  • 2 cups of flour
  • 5 eggs
  • 1 tsp of Lemon Extract
  • 1 cup coarsly chopped walnuts

Method

  1. Cream the butter, add sugar, mix until fluffy.
  2. Add eggs one at a time then add the lemon extract.
  3. Mix in the flour until thoroughly combined.
  4. Then fold in walnuts.
  5. Pour the mixture into a greased bundt pan and put in a preheated oven at 350 degrees for about 1 hour or until the cake has pulled away from the sides of the pan.
  6. Let sit for about 10 minutes on a cookie rack then invert onto a plate to cool.
  7. Once cooled you may sift powdered sugar lightly onto the cake to decorate.
  8. Slice and enjoy.

 It may also be topped with fruit of your choice, whipped topping, or ice cream.

Good one Sally. I Like it. My favourite dessert has lemon too. It\'s Lemon merengue pie. Will try it his weekend.

We enjoyed it very much. I'd found a recipe for a butter cake and wanted to try it. Michael had said he grew up eating it and that it was a rich cake. I guess I can't just leave things alone and decided I was in the mood for lemon. It worked very well. Of course that wasn't enough, don't cha know. The next time I changed the egg count and added walnuts. The cake didn't last very long in this house. lol
