Ingredients
- 1&1/2 cups all purpose flour
- 1&1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup of unsalted butter
- 3/4 cup sugar
- 2 large eggs
- 1&1/2teaspoons vanilla extract
- 2/3 cup reduced fat sour cream (yogurt works well to)
You can put some frosting, jelly beans, and/or sprinkles on the cupcakes.

Method
First
gather all the ingredients listed above. Then preheat your oven to 350
degrees Fahrenheit. After you preheated your oven, whisk the flour,
baking powder, and salt in a small bowl. After that set the bowl aside.
Next, using an electronic mixer beat the butter and sugar until it is
light and fluffy. This takes about 5 minutes. Now beat in the 2 eggs
and vanilla. Now put the mixer on low speed. After that place your
flour, baking mixture, and salt into the mixer. Warning! Place only
half of the flour, baking mixture and salt mixture in the mixer. Then
scoop the sour cream into the mixer. Now place the last half of mixture
into the mixer. Wait 3 minutes. You're almost finished! Take the
mixture out of the mixer. Evenly divide the mixture into the muffin
tin. Put in oven. Bake until a toothpick inserted into the cupcakes
comes out clean and the top is springy to your touch. This should take
about 20-25 minutes. Cool then enjoy!
