You will need:
Cupcake liners
1 Box of yellow cake mix
2 cans of white icing-or enough to frost about 2 dozen cupcakes
Green food coloring
Red Twizzlers-licorice whips
1 large bag of jelly beans
Thin white or gold colored ribbon
Line each cupcake pan with a cupcake liner. Prepare cake mix according to package directions. Fill each cupcake holder approximately 2/3 full of cake batter and bake according to directions on the box-cupcakes will be done when a toothpick inserted in the center comes out clean. Let the cupcakes cool and remove from pan.
Add a few drops of food coloring to each can of white icing. About 6 or 8 should give it a nice green color (you want it to look like grass). Next, frost the top of each cupcake. Now we will add six jelly beans to each cupcake; pressing them slightly into the icing. Now we’re ready to add our “handles” and ribbon.
Using one Twizzler per cupcake; press each end as far down on either side of the cupcake as you can to make a cupcake handle. You may need to touch up the icing slightly at the edges. Next, take a small length of ribbon (4-6 inches) and make a bow on one side of the handle. You now have an Easter basket cupcake. These are a big hit with kids of all ages.
