Ingredients:
1 (9 inch) pastry crust for a deep-dish pie (home-made or store-bought)
1/8 tsp. pepper and salt
½ C. sugar
6 C. thinly sliced, peeled apples
1 recipe Crumb Topping
3 Tbsp. all-purpose flour
½ C. chopped pecans
¼ C. caramel topping
1 tsp. ground cinnamon
Ingredients For Crumb Topping
1 C. packed brown sugar
½ C. quick cooking rolled oats
½ C. all-purpose flour
½ C. butter
Preparation:
In a large mixing bowl, stir together the sugar, flour, cinnamon, and salt. Add apple slices and gently toss until coated. Transfer apple mixture to pie shell. Sprinkle crumb topping over apple mixture. Place pie on a cookie sheet so the drippings don't drop into your oven.
Cover edges of pie with aluminum foil. Bake in preheated 375°F oven for 25 minutes, then remove foil and put back in for another 25 to 30 minutes without foil. Remove from oven. Sprinkle pie with chopped pecans, and then drizzle with caramel (caramel ice cream topping works best) on top.
Directions for Crumb Topping : Stir together brown sugar, flour, and rolled oats. Cut in ½ cup of butter until topping is like coarse crumbs. Set aside.
