Method
This cake is found in Greek delicatessens sliced in triangles and featuring a maraschino cherry on top. It is sometimes called Ravani. It is delicious but you need the syrup or else the farina will be noticeable. Farina used in a cake doesn't cook in as when cooked over the stove, that is why sugar syrup is ladled on top. The farina soaks up the syrup and the cake remains moist and oh, that good.
Ingredients
- 10 eggs 4 sticks butter
- 1 cup flour 1 cup sugar
- 1 cup farina 4 teaspoons baking powder
- 1 tablespoon vanilla 2 cups sugar syrup
Method
- Prepare a 10-15-2 ½ inch pan.
- Grease with butter and dust with flour.
- Heat oven to 350* F
- Beat butter and sugar until light.
- Mix flour, farina, and baking powder.
- Add alternately to butter mixture with eggs.
- Beat in vanilla.
- Pour into prepared pan and bake for 35 minutes or until golden.
- Cut into triangles and pour cold syrup on hot cake top.
- Let sit for several hours before serving.
Sugar Syrup
Ingredients
- 2 cups sugar
- 1 cup water
- 1 slice lemon
Method
- Bring to boiling and continue until sugar is dissolved.
- Simmer 10 minutes.
- Add 2 tablespoons raw honey and boil for another 7 minutes.
- Cool completely before using.
- Make syrup at least two hours before baking cake.
