Carrot Yogurt Cake Recipe

A healthy, moist, low-fat scrumptious dessert and snack cake!

Mix the following together:

  • 1 cup grated carrots
  • 1 cup yogurt
  • ½ cup orange juice
  • ½ cup molasses
  • ½ cup raisins
  • ½ cup sunflower seeds
  • ¼ cup oil
  • ½ tsp vanilla
  • 2 eggs well beaten with beaters

In a separate bowl combine:

  • 2 cups whole wheat flour
  • ½ cup wheat germ
  • ½ cup bran
  • 1 ½ tsp baking soda
  • 2 tsp cinnamon
  • ¼ tsp nutmeg

Method:

  1. Fold dry ingredients gradually into the carrot mixture until blended.
  2. Bake in an 8” x 8” oiled pan at 325 degrees for about one hour.
