Carrot Yogurt Cake Recipe |

A healthy, moist, low-fat scrumptious dessert and snack cake! |
Mix the following together:- 1 cup grated carrots
- 1 cup yogurt
- ½ cup orange juice
- ½ cup molasses
- ½ cup raisins
- ½ cup sunflower seeds
- ¼ cup oil
- ½ tsp vanilla
- 2 eggs well beaten with beaters
In a separate bowl combine:- 2 cups whole wheat flour
- ½ cup wheat germ
- ½ cup bran
- 1 ½ tsp baking soda
- 2 tsp cinnamon
- ¼ tsp nutmeg
Method:- Fold dry ingredients gradually into the carrot mixture until blended.
- Bake in an 8” x 8” oiled pan at 325 degrees for about one hour.
