Blueberry Jam Cake Recipe

A wonderful treat for the holidays.

Ingredients

  • 2 cups flour
  • 2 eggs
  • ½ teaspoon nutmeg
  • ¾ cup buttermilk
  • 1 teaspoon cinnamon
  • 1 cup blueberry jam
  • 1 teaspoon baking soda
  •  ½ cup pecans, chopped
  • 1 cup butter
  • 1 cup confectioners' sugar
  • 1 cup granulated sugar

Method

  1. Preheat oven to 350F. In a medium bowl, sift together flour, nutmeg, cinnamon, and Baking soda. Set aside. In a large bowl, cream butter and granulated sugar. Add eggs
  2. And buttermilk; mix well. Stir dry ingredients into butter mixture, mixing well. Stir in
  3. Jam and pecans. Pour into a greased 8- x 12-inch baking pan. Bake 45 minutes or until
  4. Toothpick inserted into middle comes out clean. Sprinkle warm cake with confectioners'
  5. Sugar.
