Blueberry Jam Cake Recipe |

A wonderful treat for the holidays. |
Ingredients
- 2 cups flour
- 2 eggs
- ½ teaspoon nutmeg
- ¾ cup buttermilk
- 1 teaspoon cinnamon
- 1 cup blueberry jam
- 1 teaspoon baking soda
- ½ cup pecans, chopped
- 1 cup butter
- 1 cup confectioners' sugar
- 1 cup granulated sugar
Method
- Preheat oven to 350F. In a medium bowl, sift together flour, nutmeg, cinnamon, and Baking soda. Set aside. In a large bowl, cream butter and granulated sugar. Add eggs
- And buttermilk; mix well. Stir dry ingredients into butter mixture, mixing well. Stir in
- Jam and pecans. Pour into a greased 8- x 12-inch baking pan. Bake 45 minutes or until
- Toothpick inserted into middle comes out clean. Sprinkle warm cake with confectioners'
- Sugar.
