Ingredients
- 6 ozs. Butter
- 6 ozss sugar
- 2 eggs
- 2 tablespoons milk mixed with 1 dessert spoon lime juice
- 1 cup mashed banana (about 3 large ripe “pisang hijau”)
- 8 ozs. Flour }
- 1 teaspoon baking power } sifted together
- 1 teaspoon bicarbonate of soda }
Method:
Cream butter and sugar. Add the eggs, one at a time, and beat well. Add the milk and the banana. Add the flour which has sifted with baking powder etc. Bake in moderate over for about 1 hour.
Rendang
Ingredients:
- 3lbs. beef, mutton or chicken - cut into small pieces.
- ½ inch piece langkuas - bruised
- 2 sticks serai - bruised
Ingredients to be ground :
- rendang level tablespoons ketumbar and 1 tablespoon jintan manis
- 20 - 30 dried chillies ( some seeded )
- 1 teacupful small red onions
Method :
Mix all the spices and ground ingredients with the meat in a pan. Add the coconut milk and salt required.
Boil till meat is tender, reduce heat and cook till curry becomes dry, turning over the contents in the pan from time to time to prevent burning.
