Baked Chocolate Puddings

Delicious dessert in chocolaty goodness.

Ingredients

  • 125 grams chocolate (55% solids)
  • ¼ liter hot espresso
  • 350 grams chocolate (70% solids)
  • 125 grams butter
  • 6 eggs, separated
  • 200 grams caster sugar
  • 100 grams ground almonds
  • 100 grams rice flour

Procedure

  1. Make the center first: Melt the 55% solids chocolate with the espresso
  2. Then pour into a small container and freeze
  3. Melt the 70% chocolate with the butter, and whisk the egg whites with the sugar until firm
  4. Fold the yolks into the cold chocolate mixture
  5. Add in the almonds and rice flour
  6. Finish by carefully folding the egg white mixture
  7. Place six small pastry rings on a baking tray and line them with baking parchment
  8. Spoon the mixture into each ring's base, then push in a small piece of frozen coffee-chocolate mixture
  9. Bake in a preheated oven, gas mark 5/190° C/375° F for 15 minutes
  10. Remove carefully form the rings and serve with ice cream!
