Baked Chocolate Puddings |

Delicious dessert in chocolaty goodness. |
Ingredients- 125 grams chocolate (55% solids)
- ¼ liter hot espresso
- 350 grams chocolate (70% solids)
- 125 grams butter
- 6 eggs, separated
- 200 grams caster sugar
- 100 grams ground almonds
- 100 grams rice flour
Procedure- Make the center first: Melt the 55% solids chocolate with the espresso
- Then pour into a small container and freeze
- Melt the 70% chocolate with the butter, and whisk the egg whites with the sugar until firm
- Fold the yolks into the cold chocolate mixture
- Add in the almonds and rice flour
- Finish by carefully folding the egg white mixture
- Place six small pastry rings on a baking tray and line them with baking parchment
- Spoon the mixture into each ring's base, then push in a small piece of frozen coffee-chocolate mixture
- Bake in a preheated oven, gas mark 5/190° C/375° F for 15 minutes
- Remove carefully form the rings and serve with ice cream!
