I recently found this amazing brownie recipe while rummaging through one of my mother's old cookbooks. Once you try this, you'll never use store bought mix again. Feel free to substitute the raspberries for anything else you like, or go pure chocolate. I have done both, and they're incredible!
Ingredients:
- Raspberry Brownies
- 3/4 c (1 1/2 sticks) butter
- 2 c sugar
- 4 eggs
- 1 1/2 tsp vanilla
- 1 1/2 c all purpose flour
- 1/4 c unsweetened cocoa powder
- 1 tsp salt
- 2 c frozen raspberries (not in syrup) *I have used fresh, and they are just as good
- 1 c chopped walnuts
- Preheat oven to 350 F. Butter a 10x15 inch baking pan.
Method:
Cream butter and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, cocoa, and salt. Fold dry ingredients into creamed mixture by hand and blend well. Spread mixture into pan. Sprinkle raspberries evenly over batter and gently press them into the batter. Sprinkle walnuts over top. Bake 20-25 mins. Let cool then serve. Yields 2-4 dz squares (depending on size).
