Delicious Taco Salad in Homemade Tortilla Bowls

An amazingly good taco salad served in easy-to-make tortilla bowls. Serves six.

Ingredients

  • 6 corn or flour tortillas
  • 6 tablespoons of extra virgin olive oil
  • ½ pound of ground beef
  • 3 cups of cooked chicken, cut into strips
  • 2 cups chopped onions
  • 3 cups of shredded lettuce
  • 1 can of refried beans
  • Shredded cheese
  • Salsa
  • Sour cream

Method

  1. Preheat oven to 400 ° . Microwave tortillas for twenty seconds; remove.
  2. Spoon one tablespoon of olive oil onto one side of six tortillas and spread around entire side.
  3. Place six oven-safe cups onto two cookie sheets. Drape one tortilla, dry side down, over each cup. Set aside.
  4. While oven is preheating, brown and drain the ground beef and heat the refried beans in a small pot on low, stirring often.
  5. Bake the tortillas 10-15 minutes or until lightly browned and crisp. Remove and let cool slightly.
  6. Remove tortilla bowls from cups. Layer refried beans, 1 cup of ground beef, ½ cup of chicken strips, 1/3 cup of onions, ½ cup of lettuce, shredded cheese, salsa and sour cream in each bowl. Serve warm. Makes 6 servings.
