I came up with this recipe during my college days and I have perfected it over the years. After the first time making it for anyone, they would always wake me up Saturday or Sunday morning demanding me to make it again. I've found that the eggs in this recipe can be substituted for egg beaters if you are looking for a bit of a healthier meal. Read it, try it, enjoy and let me know what you think!
The following recipe is for a serving of two large burritos.
Ingredients
- 1/3 cup onion and green pepper mixture
- 3 eggs, beaten
- 2 tablespoons milk
- ½ cup cheddar cheese, shredded
- ¼ cup feta cheese
- Salt and pepper, to taste
- 2 large tortilla shells
- Hot sauce (preferably not Tabasco, Frank's Hot Sauce if you can find it in your area)
Method
- Heat oil or margarine in a skillet over medium heat.
- Add the onion and green pepper mixture and cook until tender.
- Add the eggs and milk to the skillet and immediately add the cheeses.
- Add salt and pepper to taste.
- Continue cooking over medium heat, stirring frequently until the eggs are cooked through.
- Place the tortillas on a microwave-safe plate with a damp paper towel over each tortilla. Heat on High power for 30 seconds.
- Remove the paper towels and fill each tortilla with the egg mixture.
- Add hot sauce, wrap up the burritos and serve.
