Tomato and Egg Recipe

A simple stir-fry dish for a healthy lunch or dinner.

A delicious and healthy meal to eat with rice or meat!

Ingredients

  • 3 ripe tomatoes
  • 3 large eggs
  • 2 tablespoons soy sauce
  • ½ tablespoon sugar
  • Salt and pepper to taste
  • Slice tomatoes into wedges. Whip together eggs in a bowl.

Method

Lightly oil a large pan and set on medium high heat. Throw in eggs. Scramble into medium sized pieces when eggs begin to cook. While still cooking, toss in tomatoes, soy sauce, sugar, salt and pepper. Condiments do not need to be exact (I usually just take a soy sauce bottle and pour in 3 large circles and sugar 2 large circles with a sprinkle of salt and pepper. Cook until tomatoes are soft and juicy.
Plate with excess sauce over meal.
