Summer Oatmeal

This is a great oatmeal that helps aid in digestion because it soaks in yogurt overnight. I like to make a batch on the weekend and enjoy it as a fast, healthy breakfast during the week. You can be creative and change up the fruits and nuts used to suit your budget and taste.

Ingredients

  • 2 cups oatmeal
  • 1 32 ounce container yogurt (plain or vanilla flavor is best)
  • 2-4 TBSP honey to taste
  • 1-2 TSP cinnamon
  • 1 cup dried fruit (raisins, dried fruit mix, dried apricots, dates, etc)
  • 1/2-3/4 cup nuts-optional (walnuts, pecans, etc)
  • Fresh fruit to top (Strawberries, melon, bananas, peaches, etc)

Method

In large bowl combine oatmeal, yogurt, honey, cinnamon dried fruits and nuts.  Cover with plastic wrap and refrigerate overnight.  Before serving top individual bowls with fresh fruit of choice. Enjoy!!

This sounds wonderful! I love oatmeal, and I am always looking for new ways to prepare it, and I like the yogurt idea. It\'s also Diabetic friendly. I\'ll keep an eye out for more great ideas from you. Thanks Cheri!
