- 1 1'4 cups milk
- 4 eggs
- 1/3 cup + 2 Tbs. granulated sugar
- 3/4 tsp. vanilla extract
- 3/4 cup all-purpose flour
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1/4 tsp. baking powder
- 2 Tbs. butter or margarine
- 2 Granny Smith apples, peeled, cored,
cut into 1/4" thick slices
- Confectioners' sugar, optional
Preheat oven to 425 F. Whisk together milk, eggs, 1/3 cup granulated sugar and vanilla.
Whisk in flour, salt, cinnamon and baking powder until smooth. Coat 10" oven proof skillet
with cooking spray; pour in batter. Bake 20 minutes or until puffed and golden around
edges.
Mean while, in nonstick skillet over medium heat melt 1 Tbs. butter. Stir in 1 Tbs.
granulated sugar; add half of apples. Cook until lightly browned, 2 minutes per side.
Remove from skillet; reserve. Repeat with remaining butter, granulated sugar and apples.
Arrange apples on hot pancake. Sprinkle with confectioners' sugar, if desired.
Makes 6 servings. Per serving: 257 cals. 9 g. fat.
