A Frittata is the Italian version of the Spanish Tortilla.
Serves 4
Ingredients:
- 1 lb pumpkin chopped in small pieces
- 7 ounces chicken stock
- 1 large yellow onion chopped
- 4 ounces smoked ham cubed
- 6 eggs
- 2 tsps chopped fresh marjoram
- 2 tbsps sunflower oil
- salt and freshly ground black pepper
Method:
- Preheat oven to 375 and oil a large shallow baking dish.
- Heat the oil and saute onions for up to 5 minutes or until tender.
- Add the pumkin and saute another 5 minutes . Stir in the stock, cover and simmer over low heat for 5 minutes until the pumpkin is slightly tender. Add the ham.
- Pour the mixture into the prepared dish. Beat the eggs withe the marjoram and a bit of seasoning.
- Pour over the contents of the dish and then bake for 20-25 minutes until firm and golden brown.
