Halloween Ham and Pumpkin Frittata

This recipe is fun and flavorful for the visiting ghosts and goblins. Make it ahead of time and serve hot, warm, or cold.

A Frittata is the Italian version of the Spanish Tortilla.

Serves 4

Ingredients:

  • 1 lb pumpkin chopped in small pieces
  • 7 ounces chicken stock
  • 1 large yellow onion chopped
  • 4 ounces smoked ham cubed
  • 6 eggs
  • 2 tsps chopped fresh marjoram
  • 2 tbsps sunflower oil
  • salt and freshly ground black pepper

Method:

  1. Preheat oven to 375 and oil a large shallow baking dish.
  2. Heat the oil and saute onions for up to 5 minutes or until tender.
  3. Add the pumkin and saute another 5 minutes . Stir in the stock, cover and simmer over low heat for 5 minutes until the pumpkin is slightly tender. Add the ham.
  4. Pour the mixture into the prepared dish. Beat the eggs withe the marjoram and a bit of seasoning.
  5. Pour over the contents of the dish and then bake for 20-25 minutes until firm and golden brown.

I just had my first pumpkin dish last night, pumpkin and mushroom soup. First homemade soup in the new apartment. I will try this one very soon.

I've never cooked any pumpkin that wasn't from a can before. This sounds like something my kids would like to help me with.

Oh this sounds so tasty. I love fresh pumpkin. The can is okay, but fresh pumpkin has so much flavor. I am going to make this for my Halloween meal.
