Grits and Green Onion Bake

Grits are not just for breakfast.

Ingredients

  • 2 c. water
  • 1/2 c. enriched white hominy quick grits
  • 1/4 tsp. salt (optional)
  • 1 c. (4 oz.) shredded sharp Cheddar cheese
  • 1/3 c. sliced green onions
  • 1/4 c. margarine or butter
  • 1 egg, beaten
  • 1/8 tsp. liquid red pepper sauce

Method

  1. Heat oven to 350 degrees.
  2. Grease 1-quart casserole.
  3. Bring water to a boil in heavy saucepan; stir in grits and salt.
  4. Return to a boil; reduce heat.
  5. Cook, uncovered, 2 to 4 minutes or until thickened, stirring occasionally.
  6. Stir in remaining ingredients; continue cooking over low heat until cheese is melted.
  7. Pour into prepared casserole.
  8. Bake 30 minutes.

Serves 4.
