Crack eggs in mixing bowl – 1 egg per person at meal
Whip vigorously with a fork or wire whisk
Add a small amount of milk
Add a pat of (low salt) butter – less then one pat per egg
Grate Cheeses, (cheddar and mozzarella, or monetary jack)
Spice with Pepper, Garlic Salt, Oregano, Paprika, and Sage.
Add all ingredients together and blend.
Spay frying pan with non-stick spray. Be sure your pan is large enough for the job.
Pour ingredients into warm pan
Move mix around enough to melt the butter throughout, being careful not to splash.
As the eggs set up lift carefully around the edges and finally the bottom.
Garnish on plate with toast and chopped green onions.
Absolutely delicious and quite filling.
