Children and adults enjoy watching the middle of Dick’s omelets turn to tasty soufflé mountains. It adds to their gobs’ anticipation and it is never misplaced.
Ingredients
- Eggs
- Grated cheese (type and quantity according to taste)
- Splash of Milk
- Light Olive Oil to fry
- Black pepper (optional)
- Method
Method
Take a medium sized mixing bowl and crack 2-3 eggs into it. Beat with a fork, lifting the fork to get air bubbles into the mix. Add the splash of milk and continue beating. Black pepper can be added at this stage if required. Meanwhile heat the oil in a frying pan. Ensure that the pan can be placed under a hot grill. Put the grill on so it is heated when needs. Pour the egg mixture into the pan and cook as you would a normal omelet. (You should use a spatula to bring the cooked sides of the omelet towards the middle of the pan, thus allowing the uncooked egg mixture to swish into the space you make. After about a minute add the grated cheese, in an even layer, to the omelet. Allow to melt slightly. Check that the bottom of the omelet is a light golden brown before removing the pan from the hob and placing it under the hot grill. Now watch as the egg and cheese mixture combine and rise to make light and delicious mountains. Serve the omelet immediately and allow your gob to discover why it is special!
