Cheese Toast

This is better eaten right after being made.

Ingredients

  • 2 tablespoons of butter
  • 1 tablespoons of flour
  • ½ teaspoon of cayenne pepper
  • 1 cup of hot milk
  • ¾ cup of grated cheddar cheese
  • Salt
  • 2 egg yolks, slightly beaten
  • 2 egg whites, stiffly beaten, but not dry
  • 6 slices of toast

Method of Preparation

  1. Melt the butter in a saucepan
  2. Blend in the flour and cayenne pepper, and cook for 2-3 minutes, stirring
  3. slowly add the milk, stirring constantly until smooth and thickened. Stir in the cheese and cook until it is melted
  4. Add salt to taste
  5. Beat 2 tablespoons of hot cheese and cook over medium hear, stirring constantly, for 1-2 minutes, until thickened
  6. Remove from the heat, gently fold in the egg whites, and mound on toast
