Bitter Gourd Omelet

This is a quick and easy but bitter way of preparing omelet.

I can prepare this recipe in a flash but I don't eat it. I can't take the bitterness. Sometimes I just pick the meat or eggs since the bitterness doesn't usually stick to it. Shrimp paste can also be used instead of ground meat.

Ingredients

  • ¼ kilo ground beef or pork (optional)
  • 1 large bitter gourd
  • 2 large eggs
  • 1 medium onion (halved and sliced thinly)
  • 1 medium tomato (halved and sliced thinly)
  • 2 cloves garlic (sliced thinly)
  • ¼ tsp salt
  • ¼ cup cooking oil

Method

  1. Slice bitter gourd lengthwise and take out the soft core.
  2. Slice thinly about 1/8th inch thick.
  3. Beat the eggs in a small bowl and set aside.
  4. Put cooking oil in a heated shallow pan.
  5. Stir fry the ground beef until cooked; add the gourd slices until coated with oil.
  6. Add the onions, tomatoes and garlic until onions are golden brown.
  7. Add the beaten eggs stirring occasionally until eggs are cooked.
