Yummy Corn Muffins with a Twist

These are corn muffins with a bit of kick. Spicy! You could probably make them as spicy as you like.

Ingredients

  • 1 pkg Corn muffin Mix
  • 1 egg
  • 1/3 cup milk
  • ¾ cup shredded taco cheese
  • ½ cup Diced tomatoes with green chillies, drained well

Method

Preheat Oven to 400 F. Blend mix, egg, and milk. Add cheese and tomatoes. Mix lightly. Fill muffin cups half full. Bake 15 - 20 minutes or until golden brown.

Optional

Use ¾ cup Pepper cheese in place of the taco cheese. Use ½ cup fresh chopped tomato in place of the canned diced tomato.

I'm noting this down...it sounds good and easy to make. Well something that takes less time to get it edible is always a bonus.
