Thanksgiving Corn Bread

Recipe for corn bread.

Ingredients:

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour, sifted
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1-2 tsp. salt
  • 2 eggs
  • 1 1/2 cup non-dairy creamer
  • 1/3 cup vegetable oil

Method:

  1. Combine dry ingredients.
  2. Add egg, non-dairy creamer and oil.
  3. Pour into a greased 8x8 inch baking pan.
  4. Bake at 425 degrees Fahrenheit for 20 minutes or until golden brown.
  5. Be careful not to overbake, so it won't taste dry.

I've never heard this variation. I am going to have to try it, and I like to take home made corn bread, toast it, and use it for stuffing.
