Scones

2 recipes for home-made scones. They're pretty simple/basic and you can add your own cooking flare to both. Delicious.

Bacon Cheese Scones

Ingredients:

8 slices bacon
2/3 C. buttermilk
2 C. all-purpose flour
1 ½ C. grated sharp, cheddar cheese
1 ½ tsp. baking powder
1 tsp. fresh parsley, chopped
¼ tsp. baking soda
1 egg, lightly beaten
¼ tsp. salt
¼ C. butter or margarine, cut into small pieces

Preparation:

Preheat oven to 425°F. Coat baking sheet with cooking spray. In large skillet, over medium-high heat, cook bacon until crisp, 6 to 8 minutes. Transfer bacon to paper towel; cool for 5 minutes. Chop into ½ inch pieces; set aside.

Combine flour, baking powder, baking soda, and salt. With pastry blender or 2 knives, cut in butter until mixture resembles coarse crumbs. Stir in buttermilk, cheese, parsley, and bacon until combined and dough comes together. Divide dough in half. On slightly floured surface, form each half into 5 inch circles. Cut each circle into 4 wedges; transfer to baking sheet. Brush top with egg. Bake 15 minutes or until lightly browned. Cool on rack for 5 minutes.

Scones From The Dark Ages

Ingredients:

3 C. high grade flour
10 oz. butter
4 ½ tsp. baking powder
1 C. milk
¼ tsp. salt

Preparation:

Sift dry ingredients; rub in butter and mix to a soft dough with milk. Knead on lightly floured board; roll out. Cut; place on lightly greased and floured tray and bake in a hot oven at 450°F. for 10 to 15 minutes or until golden brown.

To this basic recipe, you can add sugar, fruit, cheese, or whatever sounds good to your taste buds.
