Plain Damper

Damper is a traditional Australian soda bread usually baked in a campfire. Read on for a tasty recipe.

Ingredients:

  • 1 cup SR flour Pinch mixed herbs
  • ¼C milk 15g Margarine
  • Filling:
  • 1 teaspoon oil ½ onion finely chopped
  • Clove garlic crushed 2 mushrooms
  • 1/3 cup cheese grated ¼ red capsicums

Method

  1. Heat oil in a frying pan and add onion, garlic and capsicum. cook until onion is soft
  2. Add mushrooms and stir until it is cooked
  3. Drain filling on a paper towel. Cool and add cheese and parsley.
  4. Set aside while you prepare the damper dough.
  5. Sift flour and stir in mixed herbs and rub in butter.
  6. Add enough milk to mix to soft dough.
  7. Preheat oven to 190°C.
  8. Knead on a floured surface until smooth.
  9. Divide dough into 2 equal portions and roll each portion into a 26 cm round.
  10. Brush the edges of the dough with a little extra milk and top with filling.
  11. Fold each circle into half to form a crescent shape.
  12. Press edges down firmly
  13. If you want brush the dough with milk to make golden brown.
  14. Bake at 190° 15 - 20 minutes.
